I forget the nursery rhyme...how does it go? Phatty cake, phatty cake, baker's man, bake me a cookie as thick as you can. Roll it, and bake it...and stuff it with cookie dough buttercream?
That might not be the right version of the rhyme but trust me when I say, this cookie hits all the right notes. There is NOTHING WRONG about having the most decadent chocolate chip cookie dough buttercream sandwiched between two THICK chocolate cookies.
